We are delighted to be working alongside our energetic and passionate client to recruit for a chef de partie for their stunning village pub/restaurant. The site is a beautifully finished country inn with a superb blend of traditional and contemporary décor. Situated in the lovely red brick village of Clayworth near Retford, the establishment has gained much deserved recognition for delivering consistent, quality cooking and service in comfortable surroundings.

The site currently holds a 1 AA Rosette accreditation and focuses on producing modern British pub cuisine with elements of traditional influence. There is a strong emphasis on using quality seasonal ingredients and locally sourced where possible. With a strong food led trade, the five chef brigade can cater for around 100 covers over a Friday and Saturday period and up to 150 on Sunday’s. The business currently operates six days per week (Tuesday to Sunday) with an aim in the near future to incorporate Monday as a day of trade.

Alongside the restaurant, there is also private dining facilities on the top floor, again finished to a very high standard and offering 36/38 diners the space to celebrate with close friends and family. The site holds a civil ceremony license which can facilitate 70 guests and 120 covers for the wedding breakfast. This is a quickly emerging market for the property and they are keen to further develop this side of business.

There are currently 4 superbly finished boutique rooms for staying guests with potential plans to expand in this area. The rooms are a major credit to the overall site which boast natural features with comfort and luxury. 

There is the potential of live in accommodation for the ideal candidate which is charged at a very reasonable rate. The competitive salary also comes with a tips package at around £2/2.5k per annum. There is also a bonus based profit share in place alongside the attractive package.

Candidate Role

·Assume overall charge and responsibility of designated sections throughout the kitchen

·Liaise with the senior team to develop the food business as a whole

·uphold strict legislation relating to environmental health requirements

·Participate in daily food preparation and service

·Offer input on seasonally inspired menus whilst sourcing best quality ingredients

·Train and develop junior members of the kitchen brigade

·Ensure kitchen fridges are hygienic and adopt stock rotation systems

·This is a hands on role, daily presence on the main line is essential

Candidate Specification

·Candidates must have experience working to a 1 AA Rosette level consistently

·Ideally have held chef de partie level, however, a strong demi chef looking for first appointment may be considered

·Strong leadership and management skills are essential

·Be able to communicate fluently and precisely

·Have the ability to work independently and as part of a team

·Have a keen eye for fine detail
