Description

Chefs for chefs are working alongside our client in Perthshire, looking to recruit a strong Head chef to join their small team at this award winning country house hotel and propel them to 2 Rosettes.

Set in stunning countryside, the hotel is privately owned, has 9 bedrooms and the kitchen team is serving a mixture of traditional and contemporary Scottish dishes, with the emphasis on bold flavours and clean, modern presentation.

The hotel can provide staff accommodation on top of the salary of up to £35k plus tips and bonus package including bonus for hitting 2 rosettes. This role is cooking dinner service only, they currently only serve lunch on a Sunday and the usual working hours are around 45 per week.

Candidate Role

·Assume the day to day running of the kitchen

·Develop the junior members of the team

·Train, develop and mentor the junior members of the team

·Ensure consistent quality in all food produced

·Work with the senior team to drive the business forward

·Ensure the kitchen’s food safety and hygiene protocols are maintained

·Assist to ensure financial targets are met 

·Drive towards 2 AA Rosette status

 

Candidate Specification

·Proven record at 2 AA Rosettes

·A fresh food background is a must 

·Ideally from a hotel background

·Be confident on all sections of the kitchen

·Have a cool, calm and approachable character

·Be flexible 

·Have excellent time keeping, man management and personal skills

·A keen eye for detail
