Sous Chef - Refurbished Country Inn


We are currently on the lookout for an experienced Sous chef that is looking to join a takeover for a country inn based in Buxton Peak District.

The property has been taken over by an experienced hospitality veteran with over 25 years’ experience in the trade working as a senior chef. They are looking to recruit a strong sous or head with experience working in busy fresh food country pubs to a high standard.

You will assist with the start-up of the property then after a couple of months of working alongside the owner to get the kitchen to the level needed there maybe the option of stepping up and running the kitchen operation.

The site will be offering a great selection of traditional and modern British dishes from seasonally inspired menus with also a bakery to the rear of the property using fresh artisan bread on the menus.

With the property going through a refurb and is not going to be open for another month or so the hours are a little unsure however the owner believes he will be closed Monday & Tuesday each week so 5 days over 7 for a salary of £30K per annum with a tips package. 

Candidate Role

·Assume overall responsibility of the kitchen operation on days off

·Work alongside the senior team to develop the business as a whole

·Implement and uphold staff training and development for junior chefs

·Develop and create seasonally inspired menus using best sourced ingredients

·Implement and uphold strict cleaning systems and keep up with requirements from the environmental health office

·Manage costings and stock rotations

·Minimise kitchen wastage

·Participate in daily food preparations and service 

Candidate Specification

·Sous chef experience is preferred however, a strong and experienced Junior sous chef with relevant experience may be considered

·Ideally have experience in a similar business & Property

·Excellent management and communication skills required

·Be able to train and develop junior members

·Be committed and passionate about developing food reputation

·Candidates who drive or are in the local area would be preferred

·Have a keen eye for detail

·Be able to manage cleaning schedules to maintain a hygienic working environment

·Be able to work as part of a strong, close team
