Description

We are delighted to be recruiting for a passionate junior chef for our clients beautiful Georgian country estate near Richmond, North Yorkshire.

The site is situated in acres of beautiful countryside with 43 bedrooms across the whole estate. The sous chef position will be in the casual dining or all day dining restaurant which operates completely independently from the main restaurant and the C&B, wedding side of trade.
The casual dining restaurant offers guests a relaxed Brasserie/Bistro style approach to dining and provides breakfast, lunch and dinner. Much of the produce for the kitchen is sourced from the main kitchen garden which supplies fresh herbs, seasonal vegetables and fruits to allow the chefs to create innovative, seasonal menus.
This is a great opportunity and within a stunning North Yorkshire property with good career progression. The average working week is around 50 hours which spans 5 days over 7 with either one early or late shift per week where possible.
unfortunately, there is no accommodation for the role so we would be looking for local candidates who ideally drive. However, in the area, there is affordable and good quality accommodation for rent in the surrounding areas for those looking to relocate.
On average, a typical lunch service would be made up of 30-60 covers and dinner being 50-100 depending on the day of the week and time of year. There is a committed breakfast chef in the property and this role would only be required on the breakfast chefs annual leave.

Candidate Role

  • assume joint charge of the kitchen in the head chefs absence
  • liaise with the senior team on daily operations and pre planning
  • train and develop junior members of the team
  • participate in daily food prep and service
  • uphold strict health and hygiene protocols throughout the kitchen 

Candidate Specification

  • ideally have held a junior sous chef role within a similar property however, a strong senior chef de partie would be considered
  • excellent management and communication skills essential
  • be able to lead a kitchen team during busy service
  • be creative and have a good understanding of ingredient seasonality
  • excellent time management required
