Sous Chef-Independent Restaurant & Charcuterie

Description

We are recruiting for a sous chef for our clients privately owned independent restaurant in Middlesborough.

The site has been operating for 4 years and has built a solid reputation for consistent, great cooking and service. One of the main focuses of the team is home made charcuterie where they produce in house made sausages, cured meats and buy great quality artisan cheeses. 
The restaurant currently operate a lunch and dinner service with great selection of dishes available. Lunch time touches more on a casual and relaxed dining approach with fresh home made sandwiches, meat platters and boards and light dishes. However, on the evening menu, there is a strong focus towards a more refined fine dining element with modern British and continental dishes available.
The site is a 28 cover restaurant and typically caters for 30-40 daily split between services so allows really good time for full concentration and detail while plating.
The company are working towards a 4.5 day working week which will be around the 45 hours a week mark. The kitchen brigade are quite small in size but very experienced to work in the well equipped and sized kitchen. The site is actively working towards accolades such as rosettes and Michelin Bib.

Candidate Role

·Work as part of a close team to develop the business and uphold the great reputation held

·Support the senior team with the day to day operations of the hotel

·Assume responsibility for the running of the kitchen in the absence of the head chef

·Report directly to the head chef & GM

·Assist with the upkeep of kitchen hygiene protocols

·Offer menu development ideas

·Assist in daily food prep and service

·Liaise with senior members to hand over orders and requirements

 

Candidate Specification

·Experience in high quality restaurants essential 

·Fine dining experience is essential

·Similar experience would be preferred but a strong Junior Sous may be considered

·Have a keen eye for fine detail

·can work independently and as part of a team

·Be passionate and creative

·Excellent time management skills are essential
