New Opening Casual Dining Brasserie

Description

We are recruiting for a sous chef for our clients new opening property in the beautiful Oxfordshire town of Henley-on-Thames. 

The site is owned and operated by a private company who also run a nearby well reputed gastro pub which has gained much deserved recognition for its upmarket, modern British cuisine set in comfortable and relaxed environment. 

This new site has a projected opening time of late March/early April and after a large investment and turn around will be a more relaxed dining environment. The family friendly brasserie style restaurant will seat up to 120 covers and will have strong emphasis on delivering high quality, locally sourced ingredients in a contemporary and stylish surrounding.

The brasserie will operate breakfast, lunch and dinner services and will offer a casual menu with a diverse range of dishes. 

The average working week for the role will be around 48 hours and spans 5 over 7 days. There is no accommodation available for the role so local applicants who can commute easily would be preferred.

Candidate Role

·Assume overall charge of the kitchen in the head chefs absence

·Report directly to the head chef

·Participate in daily food prep and service

·Organise and assist in running the kitchen for daily operations

·Develop junior members of the team

·Assist in the development of seasonally inspired menus

 

Candidate Specification

·Experience in high end properties is essential 

·Ideally have held similar position previously

·Great time keeping and management skills

·Be able to work independently and as part of a team

·Clean and tidy worker

.Have in depth knowledge of seasonality on produce

.Minimise food wastage
